Abstract


AT MASTER AND POSTGRADUATE THESIS HELD IN FIELD OF GASTRONOMY IN TURKEY, THE PLACE OF THE GASTRONOMY EDUCATION
In this study; Master and postgraduate thesis in the field of culinary have been screened in Turkey. Between 1981-2015 624 master and doctoral thesis have been determined about culinary. From these thesis of 515 have been found as graduate thesis, 85 doctoral thesis, 16 medical thesis, 8 area of competence in art. Being able to become a brand in the tourism sector, it shouldn’t be forget that depending on the quality of services provided (Barnes and Şahin 2014). As increasing number of academic researches take place about this issue, more problems will be handled and discussed and solutions will be created, therefore it is thought that the quality of education will be improved directly. On the summary that; considering the number of thesis that are presented it is seen the number of thesis written about gastronomy education on graduate level is not adequate, and that they reach approximately 1.44 % over total shares.
