TÜRKİYE’DE SUNULAN GASTRONOMİ ALANINDA YÜKSEK LİSANS VE DOKTORA TEZLERİNDE GASTRONOMİ EĞİTİMİNİN YERİ

Abstract
Bu çalışmada, Türkiye’de mutfak alanında yapılan yüksek lisans ve doktora tezleri taranmıştır. 1981- 2015 yılları arasında mutfak ile ilgili yapılan 624 yükseklisans ve doktora tezi olduğu belirlenmiştir. Bu tezlerden 515’i yükseklisans, 85’i doktora, 16’sı tıpta uzmanlık, 8’i sanatta yeterlilik alanında verildiği belirlenmiştir. Turizm sektöründe bir marka haline gelebilmenin, sunulan hizmet kalitesine bağlı olduğu unutulmamalıdır (Baykal ve Şahin 2014). Bu konuların akademik çalışmalardaki yeri arttıkça, daha çok sorunun ele alınacağı, tartışılacağı ve çözüm önerileri getirileceği, bunun da verilen eğitimin kalitesini doğrudan etkileyeceği düşünülmektedir. Sonuç olarak sunulan tezlerin sayılarına bakıldığında yükseklisans ve doktora düzeyinde gastronomi eğitimi konusunda yeterli sayıda tez yazılmadığı ve toplam pay içinde bu oranın yaklaşık % 1.44 olduğu görülmüştür.

Abstract
In this study; Master and postgraduate thesis in the field of culinary have been screened in Turkey. Between 1981-2015 624 master and doctoral thesis have been determined about culinary. From these thesis of 515 have been found as graduate thesis, 85 doctoral thesis, 16 medical thesis, 8 area of competence in art. Being able to become a brand in the tourism sector, it shouldn’t be forget that depending on the quality of services provided (Barnes and Şahin 2014). As increasing number of academic researches take place about this issue, more problems will be handled and discussed and solutions will be created, therefore it is thought that the quality of education will be improved directly. On the summary that; considering the number of thesis that are presented it is seen the number of thesis written about gastronomy education on graduate level is not adequate, and that they reach approximately 1.44 % over total shares.
